郵件編碼
在早期Internet中，E-mail的格式僅限於US-ASCII（7位元碼, 7 bits）的文字訊息，所以郵件不是以7位元碼型式傳送時，郵件會遭拆解變成一堆亂碼。 因此傳送郵件前必須先經編碼，郵件才不會有被截掉一個位元。 另一方面收信者必須有解碼程式，才會看到原來的訊息。
台灣的郵件伺服器都能處理BIG 5 （8 bits）中文碼，不需要做編碼與解碼的動作。 但是要送中文信到國外，還是需要做編碼與解碼的動作。
UUEncode郵件格式
在早期要傳送非US-ASCII格式的文字訊息，最常使用的是UU編碼。 方法是使用uuencode.exe編碼程式將訊息編碼成7位元US-ASCII格式寄出。 收信者再用解碼程式uudecode.exe將訊息還原為原來的訊息。
MIME郵件格式
後來發展出MIME（Multipurpose Internet Mail Extensions，多用途傳送模式）郵件傳送格式。 使用MIME可使E-mail處理非文字檔。 只要寄收雙方的e-mail軟體都具有這種功能，郵件就可以在傳送及接收時即時編碼與即時解碼，完全自動化。
MIME使用Quoted Printable與Base64兩種編碼方式。 Quoted Printable僅將資料中8 bits資料轉成7 bits，7 bits資料則不再重複編碼，適用於非US-ASCII文字內容，如中文文字檔。 Base64是將整個檔案重新編碼成7 bits，多用於傳送binary檔案。
